Super Fast Pasta Picnic Salad using common ingredients (Macros included)


  • Handful of greens (I used Spinach)
  • One Bunch Radishes
  • 1 C cherry tomatoes
  • 1 - 2.5 oz can sliced olives
  • 1 can black beans
  • 1 - 5 oz container crumbled blue cheese
  • 3 Tb Olive Oil
  • 2 Tb Balsamic vinegar
  • sprinkle of sprouted sunflower seeds
  • 1 - 16oz package of brown rice pasta


Instructions: Cook pasta. While it's cooking, chop up the veggies to a texture you like. Dump everything into a bowl and toss. That's it.

Here's the beauty of this recipe. It's just a template.

Use whatever pasta you like. Use whatever greens you like. Don't like blue cheese? Use parmesan. No balsamic vinegar in the house? Sprinkle some salt instead. Just add some pasta to veggies to fats. You can even throw in some hard boiled eggs or bacon. Just add enough flavor to give it a crunch and make it interesting. 

This salad provide a hefty dose of your daily Vitamin A (24%), Calcium (20%) and Iron (18%).
